Crab Cakes...with a whole lot of lion in it

Amazing what you can do with a mushroom !

Makes 6 big "crab" cakes
Ingredients
16 oz Lion's Mane mushroom
2 egg
1 cup panko breadcrumbs
0.5 cup onion (finely diced)
2 tbsp mayonnaise
2 tsp Worcestershire sauce
1.5 tsp "old bay" seasoning
2 tsp dijon mustard
2 tbsp parsley (finely chopped)
0.5 tsp salt
0.5 tsp black pepper
4 tbsp sunflower oil (to sauté cakes)
4 optimal garnish: lemon wedges

Instructions
Hand shred Lion's Mane Mushroom into small pieces resembling the texture of flakey crab.
In a large bowl, combine egg, mayonnaise, onion, Worcestershire sauce, old bay seasoning, Dijon mustard, parsley (finely chopped), salt, and pepper. Mix until fully incorporated.
Mix in Lion's Mane Mushroom until fully incorporated.
Mix in Panko breadcrumbs until fully incorporated.
Form mixture into 3-4 equal size round flat patties (about 1/2 to 3/4 inch thick).
Heat oil in sauté pan on medium/high heat. Don't go top high or it will burn
Cook patties for approximately 2-3 minutes per side. Should be golden brown and cooked throughout.
Squeeze of lemon on top and it's time to enjoy!

Tartar sauce
Make it with cornichon instead of sweet dill relish and it adds a bit more savory.
0.5 cup mayonnaise or vegan mayonnaise
2 tbsp chopped cornichon (or sweet dill relish)
0.5 tsp old bay seasoning
0.25 tsp sugar (no need if using sweet dill relish)
