Quick process version for you to use as a general guide when baking.

Autolysis
Add the recipe 92°F water and flour together
Wait for about 30 minutes.
Final dough
Add the recipe salt and levain to mix and cover
Rise
Rise at room temp of 70°F
Wait 10 minutes and Fold
Wait 30 minutes and Fold
Wait 60 minutes and Fold
Wait 90 minutes and Fold
Wait time needed per recipe until dough doubles in size
Divide, Shape & Proof
Dump dough on flour counter and DIVIDE into two equal parts
SHAPE dough balls and place in baskets
Cover with linen
PROOF at recipe temp for recipe time (Typically you proof in fridge with levain)
Bake
Preheat oven and dutch ovens to 475 for 45 minutes
Place dough into dutch ovens and cover
Bake for 30 minutes
Uncover dutch ovens and bake for another 10 to 15 minutes
Remove from oven and let rest on wire rack for 20 minutes
