Make sure that you have the following prior to starting
Scale in grams
Instant Thermometer
Large Mixing bowl
Stockpot or other 12+ quart vessel with optional lid
2 x 9" to 10" Proofing Baskets
2 x 6 quart dutch ovens with lids (my favorite)
small jar with a lid to store the levain
Oven Thermometer
Hint: Get a good Bread knife ... you'll thank me
